2 bacon, chopped
3 cloves garlic, crushed
1 small onion, chopped
1 spring onion, finely chopped
125 gr ricotta
1/2 cup fresh basil, finely chopped
6 cherry tomatoes, halves.
small basil leaves for garnish
heat oil, dump the bacon, garlic, onion and spring onion into the pan and stir until cooked on medium heat… it takes about 5-8 minutes.
cook the pasta until al dente. while waiting, remove the bacon etc from the heat, and stir the ricotta & chopped basil into the pan, beat until smooth. right before draining the pasta, scoop some pasta water into the ricotta mixture to thin it out. season with salt & fresh grounded pepper.
drain the pasta and stir into the ricotta sauce along with the tomato halves. garnish with small basil leaves.
