i’ve been meaning to post this recipe, but for some reasons, i keep forgetting about it. so, thanks to joanna, who reminded me this morning, here is the recipe…
kaastengels is cheese shortbread cookies. i think originally, the recipe comes from Dutch — thus the name. it’s a very popular cookie in indonesia, though.
i got this recipe from my aunt, who makes kicking kaastengels. the best, in my opinion. it turned out that it’s very easy to make, too!
125gr butter, salted
125gr Edam Cheese, mature – grated
250gr all-purpose flour
2 egg yolks
1 egg, beaten – for coating
grated parmesan for garnish
preheat your oven to 180 degrees Celcius.
on a large bowl, use electric mixer to beat the butter until turn white-ish. mix the egg into the butter. add the grated cheese slowly into the mix.
then, add the flour gradually into the mix. use the spatula or wooden spoon to knead the mixture into crumble. roll the dough to about 7mm in thickness. cut using a small cookie cutter.
traditionally, kaastengels is cut into small rectangles about 1×3 cm in size and garnished with shredded parmesan at the top. but i don’t really like the garnish and to make it fun for my daughter, i use small various shaped cookie cutters.
grease the baking pan lightly and place the cut cookies. you can place them close to each other because they don’t rise. brush each one with the beaten egg and if you want to do the garnish, sprinkle it with grated parmesan.
bake it for about 20 minutes, or about 5 minutes after the cookies start to look oily.
